Baked Stuffed Delicata Squash for your main course!

Delicata Squash (aka Cucurbita Pepo Delicata), buy it, stuff it, bake it and then eat itJ. According to many nutritious conscious people there is one common agreement that winter squash is among the most nutritious vegetables, even rivaling carrots, spinach and cabbage.

If you never had Delicata Squash and love vegetables, then you need to incorporate it into your winter menu. The only drawback is, they do not store or ship well. So if your Farmer’s Market or your Trader Joe’s have it then take advantage of the moment and buy it.

Preparing winter squash for cooking is relatively identical, does not matter which type you have. Cut it in half, clean out the seeds and stringier insides if you want to make vegetable stock you can use the stringier fibers (I just throw them away). The seeds can be toasted as if they were pumpkin seeds. Then I suggest that you bake them in about ½ inch of water at around 400 degrees for about 30-35 minutes. While the Delicata Squash is backing, I suggest you prepare the stuffing. Depending if you are a vegetarian, seafood lover or a meat eater the recipe can vary.  So you can be creative with the vegetables or with the meat.

This time I chose Mushrooms & ShrimpJ  I sautéed garlic, onions & mushrooms and shrimp in Olive Oil. I also like to use for seasoning thyme and parsley because Diane cannot have peppers. Instead of Salt I prefer low sodium soy sauce and/or vegetable stock or chicken stock whatever I happen to have available. (This time it was soy sauce) I also added a little lemon juice.

 

It is not necessary, never the less I decided to bake some of my potatoes that were left over combination of Reds & Fingerlings.  Then I stuffed the Delicata Squash with the filling and generously sprinkled some shredded cheese, this time it was using a combination of Mozzarella, Parmesan, Assiago, Fontina & Provolone if you prefer feel free to wary this as wellJ
